Avocados may be the healthiest food trend we’ve had in a while, filled omega-3 fatty acids and potassium and delicious on everything from toast to salads. This humble fruit is having its moment in the sun right now and we’re absolutely here for it with this baked finger food that makes a great party dish or snack when you’re home with friends.
2 avocados
½ cup breadcrumbs
1 gram decarbed kief
¼ cup red chili flakes
3 large eggs
1 ½ cups all purpose flour
Sambal chili paste
2 tbs Infused EVOO
Rosemary ranch

Preheat the oven to 275F.
Cut open avocados and slice into strips, removing from skin entirely.
In a small bowl, combine breadcrumbs, decarbed kief and red chili flakes. In a small, separate bowl, crack the eggs and whisk.
Prepare a baking sheet with parchment paper. Dredge each avocado slice into flour, then eggs, followed by breadcrumbs. Arrange each slice on the baking sheet and bake for 25 minutes.
Serve warm with rosemary ranch and sambal chili paste.
